Day 10-Something you're afraid of

I have two major fears, one of those being heights. Just the thought of anything high sends my heart racing. Hubby and I would love to travel around the world when the boys got older, but I don't ever think it will happen. I just don't think I can ever bring myself to get on an airplane. Not sure where this phobia has come from, when I was 11 I took a plane from Florida to NY, so I haven't always been afraid of planes and heights. I also know a fear can be over come, wonder if I will ever get there. I guess if I ever want to see what the world has to offer, I may just have too.

My second fear is mice, those creepy little rodents freak the living day lights out of me. If there is one in the house, I make my hubby stay up and catch it, as I can not sleep knowing there is one running around. Thankfully with 2 kitties I don't see many of them.

Day 9-A picture of your friends

Here is my bestie/sister, we met online through a mutual acquaintance and we became the best of friends so quickly. I totally love her to death, while we have yet to meet in person, I know that we will some day soon..:D Especially since I live in TN and she lives in NY....I can draw her down here for Nashville...;P Any way she is the type of friend who will do what ever she can for you such as send you 2 pounds of your favorite coffee just because the nearest store around you closed down or add you to her family plan when your cell phone company was being nasty. These and so many other reasons are why I love her to death and would do what ever I could for her. Just wish we lived closer.

Day 8-A place you've traveled to

I have never traveled any where exotic, although I would really love to travel to Ireland, England , Italy & Scotland. The problem with that is I need to get on a plane and I am deathly afraid of heights, and the thought of flying sends me into a panic attack.

I have traveled to other states though and I think my favorite was when my DH and I traveled to a little B&B in Vermont for our honeymoon. We went during Mardi Gras weekend and had a blast. It was nice to get away just the two of us. We had some lunch at an amazing little restaurant and enjoyed watching the Mardi Gras parade. We toured Vermont a little bit, loved all the covered bridges with snow on them. On out way home we stopped at a cool Science Museum, that had a cool exhibit where you could solve a crime just like you would on any of the criminal shows.

So until I get the guts to travel to those exotic places, this will be my fondest memory of traveling.

Day 6-A picture of something that makes you happy

At this moment in time, Cooper makes me very happy. Even when I am getting up with him at 2:30 in the morning for his potty breaks, or when I am cleaning up his accident. We adopted Coop from the local animal shelter this weekend, his owner left him in a hole with his sisters in the freezing cold. He is an 8 week old, they say, Chihuahua mix, we think he may of been mixed with a bull dog. He is such a cuddle bug..:D

Day 5-Your favorite recipes

I have a few favorite recipes, but I don't really know how to post them. I never measure, I just cook from taste and memory. I absolutely love my 6 cheese lasagna, and think the next time I make it I will try to measure out the stuff so I can post it here for everyone.

For now that I am gonna post a recipe from one of the sites I love to visit. I love visiting the Picky Palate site, she has tons of mouth watering recipes to try!

Her Homemade Shepherds Pie is one of them...
What's nice is this is a quick easy peasy meal..:D

2 1/2 lbs peeled diced potatoes

3 Tablespoons butter

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon Lawry’s garlic salt

1 Cup milk

______

2 Tablespoons extra virgin olive oil

1 medium onion, finely chopped

1 Tablespoon fresh minced garlic

1 lb ground beef

1/4 teaspoon salt

1/4 teaspoon pepper

2 Cups green beans

_______

Sauce

3 Tablespoons butter

3 Tablespoons all purpose flour

1/4 teaspoon salt

1/4 teaspoon black pepper

1 Cup chicken broth

_____

1 Cup shredded cheddar cheese

1. Place peeled and diced potatoes into a large pot of water. Bring to boil and boil for 13-15 minutes or until potatoes are fork tender. Drain and transfer to the bowl of a stand or electric mixer. Mix in butter, salt, pepper and garlic salt. Slowly add milk until nice and creamy. Keep tasting potatoes to see if you need more seasonings. When done to your liking, set aside for a few minutes.

2. Preheat oven to 350 degrees F. Heat oil into a large skillet over medium heat. Saute onions until translucent, about 5 minutes. Add garlic, beef, salt and pepper; cook until browned. Stir in green beans then reduce heat to low.

3. To prepare sauce, melt butter into a medium saucepan over medium heat. Whisk in flour, salt and pepper then slowly add in chicken broth until thick and creamy. Add sauce to meat mixture then transfer to bottom of a 9×13 inch baking dish. Pour mashed potatoes over meat mixture then top with shredded cheese. Bake for 20-25 minutes or until cheese is melted through.

8 servings

I have also found a few new recipe's I hope to try out sometime this week.

The Cowboy Burger......

1 lb bacon

1 1lb ground beef

2 Tablespoons fresh minced garlic

2 Tablespoons worchestershire sauce

1 teaspoon kosher salt

1/2 teaspoon fresh cracked black pepper

1/2 Cup shredded cheddar cheese plus 1/2 Cup for topping burgers

2 seeded onion rolls, split and toasted

4 Tablespoons mayonnaise

1 Cup shredded iceburg lettuce

4 slices tomato, 1/2 inch thick

4 baked onion rings

2-4 Tablespoons BBQ sauce (I used KC Masterpiece)

1. Preheat grill to medium high. Fry bacon in a large skillet over medium heat until browned and crisped. Drain and save drippings. In a large bowl combine the beef, garlic, worchestershire sauce, salt, pepper and cheddar cheese. Form into 2 large patties and grill for 4-5 minutes each side. During the last few minutes, add additional cheddar cheese to melt. Place mayonnaise onto both sides of split rolls and layer lettuce, tomato, burger, onion rings then BBQ sauce on bottom rolls. Place roll on top and serve!

2 LARGE Burgers

For dessert we are gonna try out these yummy looking brownies!

Chocolate Peanut Butter Covered Brownie Bites

1 brownie mix such as Pillsbury

2 Cups semi sweet chocolate chips
1/4 Cup peanut butter

1. Prepare brownie mix according to package directions. Bake until toothpick comes out nearly clean from center but still slightly undercooked. Remove from oven and let cool for 15 minutes. When you are able to touch brownies comfortably, scoop brownies with a medium cookie scoop, roll tightly into a ball and place onto a wax paper lined baking sheet. Continue rolling until brownies are gone. Freeze brownies until very firm, a couple hours or overnight. No worries if your brownie balls aren’t perfect, once frozen reshape them. They are easier to handle when chilled.

2. Place chocolate chips over a double broiler (or heat in microwave until smooth) to melt, then stir in peanut butter until creamy smooth. Roll each frozen brownie ball into chocolate and place onto wax paper to dry. Enjoy room temperature or chilled.

Day 4-Your parents

This is my mooma! I don't get to see her as she lives in NY and I live in TN. It's been a long 4 years, and I hope to see her soon. We talk on the phone all the time, pretty much every single day, but it just isn't the same. Some days you just need a big old hug from your mama.

Day 3-Your first love

I was pretty young when I experienced my first love. When I was in High School I met this boy at a friends house. We were both spending the weekend there. We chatted for a bit, played a bunch of board games together and became friends. That night we shared the couch bed together (totally pc) and he was such a gentleman. He went back to his house in Lake George and I lived in Waterford. It was a couple weeks before I had heard from him again. It was so funny when he called. He asked for me, and I said this is her. He was like hey this is so and so, and I couldn't figure out who he was. He's like you know your boyfriend. It had been a couple of weeks and I totally didn't think about him. I felt bad as he was hit hard with the flu and didn't have a chance to call. We dated for a few months before he was being shipped out for the military. I loved every minutes I spent with him. A lot of people say you never know true love at the age, but I believe you can. I know I did. I really regretted losing contact with him, and always wondered how he was and what he was up too. Last year sometime on Facebook he contacted me. I was so excited, I didn't know what to think. I had so many mixed emotions. Scared, nervous, excited, happy with little heart flutters. It's not every day you get to chat with an old love. It was cool to see he remembered me the same way, that I had meant just as much to him back then as he did to me. We talked about our lives and our families. It was so great to see that he had found someone who loved him dearly, and that he had children. I loved seeing someone I cared so much about have success in life. Now as I tell this story I must say that he will always hold a special place in my heart, and that my heart will always flutter a little at the thought of him. I love having such a memory to treasure of High School love.

Day 2-Meaning behind your blog name

I wish I could tell you some great store about my blog name, but there really isn't anything special. I am so horrible at picking out names. Takes me forever and hubby is really no help at all. Too me a few hours before something came to me. I am very sassy, along with being obsessed with digital scrapping. So....I just combined the two of them together!
